Rainbow Cupcakes


We made rainbow cupcakes for our playgroup this week in honor of St. Patrick's and the whole rainbow thing. 

MD usually helps me out by adding the ingredients and stirring but he usually is scared of using the electric mixer.  This is the first time he used it and had fun with it. 


We mixed food coloring into the divided batter and then layered the batter colors into the cups to get the rainbow effect.  This idea came from Family Fun magazine.


I didn't get a picture but before serving you add a whipped cream "cloud" on top and they look really cute.  They were yummy!

  4. Am going to try these tomorrow night and put a soldier of butter cream on the top. Maybe some sprinkles if I have them. Thanks. :)
